"Stuffing" Meatloaf

"Stuffing" Meatloaf

This traditional recipe uses store bought stuffing mix in place of breadcrumbs. It adds herbs and spices and makes for a deliciously moist meatloaf.

Ingredients

Prepare Meatloaf
  • 2 lbs 80/20 Ground Beef
  • 2 cups Stuffing Mix (or 1 box if using Stovetop)
  • 1/2 cup chopped onion
  • 1/2 cup milk
  • 2 beaten eggs
  • Seasonings of your choosing
Glaze Topping
  • 1/4 cup BBQ Sauce
  • 1 tbsp Ketchup
  • 1 tsp yellow Mustard
  • 2 tbsp Worcestershire Sauce
  • 2 tbsp honey
  • 2 tbsp brown sugar

Instructions

Prepare Meatloaf
  1. Preheat oven to 350 degrees.
  2. In large bowl, mix together all ingredients for meatloaf. Use hands to make sure everything is evenly combined.
  3. Shape into loaf and place in baking dish with sides.
  4. Bake for 30 minutes.
  5. While meatloaf is baking, combine ingredients for glaze. After 30 minutes of baking time, glaze top of meatloaf with sauce. Continue baking 30-45 minutes or until internal temperature is 165 degrees.
  6. Slice and serve with mashed potatoes!
