Ingredients
Cake
- 2 cups All purpose Flour
- 2 cups Sugar
- 1 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 cup unsalted butter
- 1 cup water
- 1/2 cup creamy peanut butter
- 1/2 cup vegetable oil
- 2 eggs, at room temperature
- 1 tsp vanilla extract
- 1/2 cup buttermilk
Frosting
- 1/2 cup unsalted butter
- 1/2 cup creamy peanut butter
- 6 tbsp buttermilk
- 1 tsp vanilla extract
- 1/8 tsp salt
- 3 cups sifted powdered sugar
- 3-4 tbsp heavy cream
Instructions
Prepare Cake
- Preheat oven to 350 degrees.
- In medium saucepan, melt butter along with water and bring to a simmer. Remove from heat and stir in peanut butter and oil. Set aside.
- In medium bowl, whisk together flour, sugar, baking soda, and salt.
- In separate large bowl, mix eggs, buttermilk, and vanilla. Next, add peanut butter mixture to egg mixture and mix.
- Add dry ingredients into wet and stir just until combined.
- Pour into greased 9x13 baking dish and bake 35-40 minutes until a toothpick inserted comes out clean.
Prepare Frosting
- While cake is baking, prepare frosting.
- In saucepan, melt butter, peanut butter, and buttermilk. Remove from heat and add in vanilla and powdered sugar.
- Slowly add in heavy cream to thin out. Keep frosting slightly warm until time to frost the cake. It sets up very quickly as it cools.
- When cake is done, I take a fork and poke about 10-12 times throughout. Pour warm frosting over cake. Let set 1 hour before cutting.
