Old Fashioned Peanut Butter Cake

This easy-to-make homemade peanut butter cake is the perfect balance of light and sweet.

Ingredients

Cake
  • 2 cups All purpose Flour
  • 2 cups Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 cup unsalted butter
  • 1 cup water
  • 1/2 cup creamy peanut butter
  • 1/2 cup vegetable oil
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
Frosting
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 6 tbsp buttermilk
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 3 cups sifted powdered sugar
  • 3-4 tbsp heavy cream

Instructions

Prepare Cake
  1. Preheat oven to 350 degrees.
  2. In medium saucepan, melt butter along with water and bring to a simmer. Remove from heat and stir in peanut butter and oil. Set aside.
  3. In medium bowl, whisk together flour, sugar, baking soda, and salt.
  4. In separate large bowl, mix eggs, buttermilk, and vanilla. Next, add peanut butter mixture to egg mixture and mix.
  5. Add dry ingredients into wet and stir just until combined.
  6. Pour into greased 9x13 baking dish and bake 35-40 minutes until a toothpick inserted comes out clean.
Prepare Frosting
  1. While cake is baking, prepare frosting.
  2. In saucepan, melt butter, peanut butter, and buttermilk. Remove from heat and add in vanilla and powdered sugar.
  3. Slowly add in heavy cream to thin out. Keep frosting slightly warm until time to frost the cake. It sets up very quickly as it cools.
  4. When cake is done, I take a fork and poke about 10-12 times throughout. Pour warm frosting over cake. Let set 1 hour before cutting.
