This casserole can be made the night before or ahead of time, so it makes the perfect easy meal! You can also make and bake right away.

Ingredients
- 1 Loaf of French Bread
- 5 Eggs
- 2 cups Milk
- 1/4 cup Maple Syrup
- 1.5 tsp Cinnamon
- 1 tsp Vanilla
- 1/8 tsp Salt
- 1.5 cups Blueberries
- 1/4 cup Brown Sugar
- Powdered Sugar for Topping
Instructions
- Preheat oven to 350. (If Baking right away. - You can also assemble and cover with plastic wrap, and store in fridge overnight before baking. I would let casserole sit out 15 minutes before baking if doing overnight version.)
- In 9x13 baking dish, combine eggs, milk, syrup, cinnamon, vanilla, and salt. Whisk thoroughly.
- Break bread into bite sized pieces into egg mixture. Add blueberries. Stir to moisten and combine.
- Top with brown sugar.
- Bake, uncovered, 45-55 minutes, until middle is set and tops are slightly golden brown. You can cover loosely with foil, if tops start to turn too brown.
- Top with powdered sugar and serve immediately with more maple syrup!
