This is a recipe that has been in our family for years! It's a true comforting classic. It's smooth, warm, and creamy...and hits the spot on a cold winter's day!

Ingredients
- 3 cups, chopped potatoes (I use Russets, chopped into 3/4 inch cubes)
- 3 tbsp butter
- 1/2 medium onion, diced
- 2-3 cups chicken broth (will need enough to cover potatoes)
- 1/3 cup flour
- 1 cup sour cream
- 2 cups milk
- Salt and Pepper to Taste
- Toppings for soup like shredded sharp cheddar, crumbled bacon bits, green onion, croutons, etc.
Instructions
- In large pot, melt butter and sauté' onion until slightly translucent.
- Peel and chop potatoes into 3/4 inch cubes. Add to pot.
- Cover onions and potatoes with broth. Bring to a simmer and cook 15-20 minutes, or until potatoes are starting to become fork tender.
- In separate bowl, whisk together flour, sour cream, and milk.
- After potatoes have been cooking 15 minutes, stir in milk mixture. Cover and continue to cook on low, additional 15 minutes.
- Can add additional milk if you need to thin out your soup.
- Top with cheese and bacon bits, and serve with warm cheese toast!
