Classic Potato Soup

This is a recipe that has been in our family for years! It's a true comforting classic. It's smooth, warm, and creamy...and hits the spot on a cold winter's day!

Ingredients

  • 3 cups, chopped potatoes (I use Russets, chopped into 3/4 inch cubes)
  • 3 tbsp butter
  • 1/2 medium onion, diced
  • 2-3 cups chicken broth (will need enough to cover potatoes)
  • 1/3 cup flour
  • 1 cup sour cream
  • 2 cups milk
  • Salt and Pepper to Taste
  • Toppings for soup like shredded sharp cheddar, crumbled bacon bits, green onion, croutons, etc.

Instructions

  1. In large pot, melt butter and sauté' onion until slightly translucent.
  2. Peel and chop potatoes into 3/4 inch cubes. Add to pot.
  3. Cover onions and potatoes with broth. Bring to a simmer and cook 15-20 minutes, or until potatoes are starting to become fork tender.
  4. In separate bowl, whisk together flour, sour cream, and milk.
  5. After potatoes have been cooking 15 minutes, stir in milk mixture. Cover and continue to cook on low, additional 15 minutes.
  6. Can add additional milk if you need to thin out your soup.
  7. Top with cheese and bacon bits, and serve with warm cheese toast!
