Lunch Lady Brownies

Ingredients

  • 1 cup Sugar
  • 1 stick butter, melted
  • 2 Eggs
  • 1 tbsp Vanilla Extract
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 cup Flour
Frosting
  • 2 tbsp softened butter
  • 3 tbsp milk
  • 2 tbsp unsweetened cocoa powder
  • 1.5 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees.
  2. Line 9x9 (or 8x8) dish with parchment paper. Spray with cooking spray.
  3. In a medium bowl, mix together butter and sugar until light yellow in color.
  4. Stir in eggs and vanilla. Add in cocoa and flour, adding half of each at a time, mixing after.
  5. Pour brownie batter into the dish and bake for 20-25 minutes or until a toothpick comes out "not wet." Do not overbake.
  6. While brownies are baking, prepare frosting by mixing all ingredients.
  7. When brownies are finished baking, let cook for 10 minutes. Then, spread frosting all over brownies and let cool.
