Debbie’s Squash Casserole

The added stuffing mix really elevated this dish!

 

Debbie's Squash Casserole

Ingredients

  • 6-7 Squash.
  • 1/2 cup chopped onions
  • 1/2 to 3/4 bag of Pepperidge Farm herb seasoned stuffing
  • 1 stick butter
  • 1 can Cream of Chicken soup
  • 1/2 pint (8oz) Sour Cream
  • 2 cups shredded cheddar cheese

Instructions

  1. Chop squash into rounds
  2. chop 1/2 cup of onion
  3. Cook squash and onion on the stove by filling a pan with. water until squash is halfway submerged. you can add salt and pepper here if you choose.
  4. Drain squash and onions.
  5. In the same pan, mix in cream of mushroom soup.
  6. add sour cream.
  7. Melt 1 stick of butter in a separate bowl
  8. Mix stuffing mix and melted butter
  9. Layer bottom of 9x13 with stuffing mix
  10. Layer squash mixture on top of the stuffing mix
  11. Cover with shredded cheese.
  12. Bake 350 degrees for 30-40 minutes until cheese is bubbly but not burnt.
