Debbie’s Squash Casserole
The added stuffing mix really elevated this dish!
Debbie's Squash Casserole
Yield: 10
Ingredients
- 6-7 Squash.
- 1/2 cup chopped onions
- 1/2 to 3/4 bag of Pepperidge Farm herb seasoned stuffing
- 1 stick butter
- 1 can Cream of Chicken soup
- 1/2 pint (8oz) Sour Cream
- 2 cups shredded cheddar cheese
Instructions
- Chop squash into rounds
- chop 1/2 cup of onion
- Cook squash and onion on the stove by filling a pan with. water until squash is halfway submerged. you can add salt and pepper here if you choose.
- Drain squash and onions.
- In the same pan, mix in cream of mushroom soup.
- add sour cream.
- Melt 1 stick of butter in a separate bowl
- Mix stuffing mix and melted butter
- Layer bottom of 9x13 with stuffing mix
- Layer squash mixture on top of the stuffing mix
- Cover with shredded cheese.
- Bake 350 degrees for 30-40 minutes until cheese is bubbly but not burnt.
