These chicken thighs were so tender and flavorful and very easy to make.

Ingredients

  • 2.5 lbs. boneless skinless chicken thighs, trimmed.
  • salt and pepper to taste.
  • 1/3 cup bourbon or substitute 1/2 cup apple juice or chicken broth
  • 3/4 cup brown sugar
  • 1/2 cup soy sauce
  • 2 tbsp minced garlic (about 6 cloves)
  • 1/2 tsp smoked paprika.
  • 1/2 med red onion diced.
  • 2 tbsp corn starch
  • 3 tbsp cold water
  • Green onion, Sliced.

Instructions

  1. Season chicken both sides with salt and pepper (easy on the salt due to the soy sauce) and smoked paprika then add to the bottom of a crockpot. sprinkle in red onion and set aside.
  2. In a mixing bowl, add apple juice (bourbon, or broth), brown sugar, soy sauce, garlic. Wisk well until well combined
  3. Pour sauce over chicken and stir to cover all pieces.
  4. Cover with lid and cook on high for 3-4 hours.
  5. Combine corn starch and water in a small bowl to make a slurry.
  6. Mix corn starch mixture into crockpot 30 minutes before done to thicken sauce.
  7. Serve over rice and garnish with green onion.
