Crockpot Bourbon Chicken
These chicken thighs were so tender and flavorful and very easy to make.
Crockpot Bourbon Chicken

Ingredients
- 2.5 lbs. boneless skinless chicken thighs, trimmed.
- salt and pepper to taste.
- 1/3 cup bourbon or substitute 1/2 cup apple juice or chicken broth
- 3/4 cup brown sugar
- 1/2 cup soy sauce
- 2 tbsp minced garlic (about 6 cloves)
- 1/2 tsp smoked paprika.
- 1/2 med red onion diced.
- 2 tbsp corn starch
- 3 tbsp cold water
- Green onion, Sliced.
Instructions
- Season chicken both sides with salt and pepper (easy on the salt due to the soy sauce) and smoked paprika then add to the bottom of a crockpot. sprinkle in red onion and set aside.
- In a mixing bowl, add apple juice (bourbon, or broth), brown sugar, soy sauce, garlic. Wisk well until well combined
- Pour sauce over chicken and stir to cover all pieces.
- Cover with lid and cook on high for 3-4 hours.
- Combine corn starch and water in a small bowl to make a slurry.
- Mix corn starch mixture into crockpot 30 minutes before done to thicken sauce.
- Serve over rice and garnish with green onion.
