This classic comfort dish is super easy to throw together, but will taste like you’ve spent hours preparing it!

Ingredients

  • 1lb Ground Beef
  • 1 tbsp Avocado Oil
  • 1 tbsp Minced Garlic
  • 1 Onion, diced
  • 1/2 tsp Salt
  • 1/2 tsp Paprika
  • 2 tbsp Flour
  • 2 tbsp Tomato Paste
  • 1/4 cup red wine
  • 1 cup Beef Broth
  • 1 cup frozen Peas & Carrots
  • 1/4 tsp dried Thyme
  • 1/4 tsp Dried Rosemary
  • 1 tbsp chopped Fresh Parsley
  • Mashed Potatoes, homemade or store bought
  • 1.5 cups Sharp Cheddar Cheese
Mashed Potatoes (Homemade)
  • 4-5 Cups Yellow Potatoes, clean with skin on and chopped
  • 1/2 stick butter
  • 1/2 cup heavy cream (more or less)
  • Salt & Pepper to Taste

Instructions

  1. Preheat the oven to 400.
  2. Heat oil in a large skillet. Brown ground beef with onion until no longer pink. Drain excess fat.
  3. Stir in remaining ingredients, excluding the mashed potatoes and cheese. Simmer for 10 minutes.
  4. Pour meat mixture into a baking dish.
  5. Top with mashed potatoes then top with cheese.
  6. Bake for 20 minutes or until the cheese is golden brown and bubbly!
Mashed Potatoes
  1. In a large pot, cover potatoes with water. Simmer for 15 minutes or until fork tender.
  2. In the microwave, melt butter and cream together. Stir.
  3. Pour half of the cream and butter over potatoes.
  4. Season well and mash with potato masher.
  5. Add more liquid slowly, stirring in between until desired consistency.
 
 

Mashed Potatoes
4-5 Cups Yellow Potatoes, clean, skin on chopped
1/2 stick butter
1/2 cup heavy cream (more or less)
Salt & Pepper to Taste

In a large pot, cover potatoes with water. Simmer for 15 minutes or until fork tender. In the microwave, melt butter and cream together. Stir. Pour cream and butter over potatoes starting with half. Season. Mash with potato masher. Add more liquid slowly, stirring in between until desired consistency.
