Ingredients

  • Two 20-ounce cans of pineapple chunks in juice, juice drained (keep 6 tablespoons of this juice)
  • 1/3 cup of sugar
  • 5 tablespoons of flour
  • 1.5 cups of shredded Cheddar cheese
  • 1/4 cup of butter, melted
  • 1 sleeve of Ritz crackers, crushed

Instructions

  1. Preheat oven to 350 degrees.
  2. In a bowl of medium size, whisk together the sugar, flour, and the 6 tablespoons of juice you kept from the pineapple cans. Throw in the pineapple chunks and stir them around until they're well-coated. Transfer this mixture into an 8x8-inch baking dish and sprinkle the top evenly with the shredded Cheddar cheese.
  3. Prepare the Topping: In a separate bowl, mix the crushed Ritz crackers with the melted butter. Once combined, gently spread this crumbly mixture over the pineapple and cheese layer.
  4. Baking Time: Place the casserole in the oven and let it bake for about 30 minutes. You're looking for a golden top and a bubbly edge to let you know it's done.
