Poppy Seed Chicken Casserole

This is a tried and true classic dish that has been around for many years!

Ingredients

  • 3 Cups Chopped Chicken
  • 1 10.5 oz can cream of chicken soup.
  • 16 oz sour cream
  • 1/2 TBSP poppy seeds
  • 2-3 sleeves of Ritz Crackers, Crushed
  • 3/4 cup butter, melted.

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine chicken, cream of chicken soup, sour cream and poppy seeds.
  3. Spray 9x13 casserole dish with olive oil or cooking spray.
  4. add chicken mixture to dish and spread evenly.
  5. In separate bowl add 2 or 3 sleeves of crushed Ritz Crackers, add butter while stirring to moisten crackers. You can add more or less Ritz based on your preference. I used 3 sleeves in mine.
  6. Sprinkle Ritz mixture over top of chicken evenly.
  7. Bake for 15 minutes covered, then another 15 minutes uncovered or until cracker topping is lightly browned.
  8. Let cool for 3-5 minutes and serve.
