Creamy Pumpkin and Gnocchi Skillet

Ingredients

  • 1 Package Apple Chicken Sausage, sliced into 1/2 inch rounds
  • 1 tbsp Olive Oil
  • 10 oz. Potato Gnocchi
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1 cup Pumpkin Puree
  • 3 Garlic Cloves, minced
  • 1 tbsp fresh Sage
  • 2 tbsp Fresh Thyme
  • Salt & Pepper to Taste.

Instructions

  1. In large skillet, heat 1 tbsp olive oil.
  2. Add chicken sausage and cook about 5 minutes on each side, until color forms.
  3. Next, add gnocchi, heavy cream, and stock. Bring to a simmer.
  4. Cook for 5 minutes.
  5. Next, add pumpkin puree, garlic, and seasonings.
  6. Cook for additional 5-10 minutes until gnocchi is cooked through.
