Creamy Pumpkin and Gnocchi Skillet
This 30 minute, one pan meal is perfect for a quick weeknight meal....and tastes just like the holidays!
Creamy Pumpkin and Gnocchi Skillet
Yield: 4
Ingredients
- 1 Package Apple Chicken Sausage, sliced into 1/2 inch rounds
- 1 tbsp Olive Oil
- 10 oz. Potato Gnocchi
- 1 cup Heavy Cream
- 1/2 cup Chicken Broth
- 1 cup Pumpkin Puree
- 3 Garlic Cloves, minced
- 1 tbsp fresh Sage
- 2 tbsp Fresh Thyme
- Salt & Pepper to Taste.
Instructions
- In large skillet, heat 1 tbsp olive oil.
- Add chicken sausage and cook about 5 minutes on each side, until color forms.
- Next, add gnocchi, heavy cream, and stock. Bring to a simmer.
- Cook for 5 minutes.
- Next, add pumpkin puree, garlic, and seasonings.
- Cook for additional 5-10 minutes until gnocchi is cooked through.
