Cajun Chicken Pasta Soup

Cajun Chicken Pasta Soup

Ingredients
- Cajun Chicken Pasta soup
- Ingredients:
- Cajun seasoning-
- ½ tbsp Paprika
- ½ tsp Dried Oregano
- ½ tsp Garlic Powder
- ½ tsp Thyme
- ¼ tsp Salt
- ¼ tsp White Pepper
- ¼ tsp Cayenne pepper (Spice level -7/10. add more or less to control heat)
- 2 cups Rotisserie chicken, shredded
- 2 tbsp Butter
- 1 cup chopped Yellow Onion
- 2 tbsp minced garlic
- 5 cups Chicken broth (I said 4 in the video)
- 1 can Rotel (drained, your preference on heat level)
- 1 cup heavy cream
- 1 dry cup ditalini pasta
- Chopped green onion- garnish
- ½ cup mozzarella cheese - garnish
Instructions
- In a Dutch Oven or large soup pot on medium heat, melt butter.
- Add chopped onions and sauté for 5 minutes, then stir in garlic and seasonings.
- Continuously stir and cook for 5 minutes. Remove from heat.
- Add chicken Broth, Rotel, heavy cream.
- Next return back to heat and bring to a boil.
- Add Ditalini pasta and cook for 10 minutes over low/medium heat.
- Lastly, add your rotisserie chicken and cook 5 minutes.
- Serve in a bowl topped with small portion of mozzarella cheese and green onion for garnish.
