Ingredients

  • Cajun Chicken Pasta soup
  • Ingredients:
  • Cajun seasoning-
  • ½ tbsp Paprika
  • ½ tsp Dried Oregano
  • ½ tsp Garlic Powder
  • ½ tsp Thyme
  • ¼ tsp Salt
  • ¼ tsp White Pepper
  • ¼ tsp Cayenne pepper (Spice level -7/10. add more or less to control heat)
  • 2 cups Rotisserie chicken, shredded
  • 2 tbsp Butter
  • 1 cup chopped Yellow Onion
  • 2 tbsp minced garlic
  • 5 cups Chicken broth (I said 4 in the video)
  • 1 can Rotel (drained, your preference on heat level)
  • 1 cup heavy cream
  • 1 dry cup ditalini pasta
  • Chopped green onion- garnish
  • ½ cup mozzarella cheese - garnish

Instructions

  1. In a Dutch Oven or large soup pot on medium heat, melt butter.
  2. Add chopped onions and sauté for 5 minutes, then stir in garlic and seasonings.
  3. Continuously stir and cook for 5 minutes. Remove from heat.
  4. Add chicken Broth, Rotel, heavy cream.
  5. Next return back to heat and bring to a boil.
  6. Add Ditalini pasta and cook for 10 minutes over low/medium heat.
  7. Lastly, add your rotisserie chicken and cook 5 minutes.
  8. Serve in a bowl topped with small portion of mozzarella cheese and green onion for garnish.
