Ingredients

  • 8 Beef Short Ribs
  • Salt & Pepper
  • 1 cup all purpose flour
  • 3 slices bacon, chopped
  • 1 whole onion, diced
  • 3 whole carrots, diced
  • 2 whole shallots, diced
  • 2 cups red wine
  • 1 carton beef broth
  • 2 sprigs thyme
  • 1 tsp Italian seasoning

Instructions

  1. Salt and pepper ribs. Dredge in flour and set aside.
  2. In large dutch oven, fry bacon pieces until crispy. Remove from pot leaving bacon grease.
  3. Brown sides of spare ribs 45 seconds on each side in dutch oven.
  4. Add veggies.
  5. Pour in wine and cook for 2 minutes, making sure to scrape bits off bottom of pot.
  6. Add broth, salt and pepper, thyme, and Italian seasoning.
  7. Put lid on and cook in oven at 350 degrees for 2 hours.
  8. next, lower oven temperature to 325 degrees and cook an additional 45 minutes - 1 hour or until ribs are fork tender. Serve over mashed potatoes or rice.
