Ingredients

  • 3 cups Peeled & Cubed Russet Potatoes
  • 2 cups Broccoli Florets, chopped
  • 1/2 cup Carrot, diced
  • 1 Shallot, diced
  • 1/4 tsp smoked paprika
  • 1/4 tsp Cayenne
  • Salt & Pepper to taste
  • 4 Cups Chicken Broth
  • 1 Package Garlic & Herb Boursin Cheese
  • 2 Cups Shredded Cheddar
  • 1 Cup Heavy Cream

Instructions

  1. Combine all ingredients EXCEPT Cheese and heavy cream.
  2. Cook on low for 4.5 hours or until potatoes are tender. Blend 1-2 cups or use an immersion blender for only a few seconds inside the crockpot. (Or keep all veggies whole.)
  3. Next, add shredded cheese, Boursin, and heavy cream. Continue cooking on low for 30 minutes or until Boursin is melted and creamy. Add additional shredded cheese and cooked bacon crumbles on top!
